When its crystal-clear glass bottle stands out in the middle of the table, and its shape is a bit pot-bellied, you know, you drink well. The Blanc de blancs by Ruinart is, by definition, the icon of the house and, at the same time, its most representative cuvée. In this case the chardonnay, used in purity, comes from vineyards from the Côte des Blancs and the Montagne de Reims. The result is a Champagne of extreme finesse, able to evolve for years in the cellar, thanks to the care with which it is refined within the famous crayères. The chalk quarries dug underneath the city of Reims and used for centuries to protect the evolving wines, allowing them to remain in an ideal environment in terms of temperature, humidity, darkness but above all silence. In this great Champagne chardonnay literally explodes in all its aromatic richness. Thus one discovers a wine characterized by a beautiful straw yellow color of extreme vivacity, where millions of fine bubbles rise from the bottom of the glass in uninterrupted chains. On the nose it is elegant and exuberant. Fruity, citrusy and with notes of white flowers. Then more yeast, pastry and custard. on the palate, however, it is fresh and elegant. The same sensations perceived previously return, completed, however, by toasted aromas typical of the Dom Ruinart style. It is no coincidence that this is the Blanc de blancs the emblem of the house.
