This is why they produce various interpretations of it on their San Silvestro estate, including this truly unique one. It is, in fact, a Barbera passito, a true oenological gem. An interesting novelty in the traditional Piedmontese wine panorama. Although, traditionally, Barbera passita has always been produced in small wineries in the Alessandria area. But it is only since 2014 that the regulations have regulated its marketing. In this case, the overripe bunches of Barbera undergo a special drying process. A sort of 'withering' that aims to concentrate the colour and above all the aromas. This is followed by an ageing phase before marketing. A rich and opulent wine, it is striking on the nose for the power of its aromas reminiscent of ripe fruit and marasca cherry jam. In the mouth, however, a slight residual sugar accompanies the velvety and silky sensations of fine tannins. A very special wine, this Barbera can accompany meat dishes or mature cheeses. Others, however, prefer to sip a glass at the end of a meal as a meditation wine.
