This is because Dom Pérignon P2, or rather, Plénitude 2, represents the second life of the world's most famous Champagne. A second life that begins after nearly 20 years of resting in the cellar. Indeed, since the creation of each Millesimato, a number of bottles of Dom Pérignon are kept aside and set aside for longer maturation. Due to this additional waiting time, the activity inside the bottles intensifies and the yeasts transmit new energy to the wine. The year 2003, in particular, will forever remain the year that changed the history of Champagne. The scorching summer forced the earliest harvest in Dom Pérignon's history since 1822, leading the winery to interpret this unique year with an approach inspired by intuition and forward-thinking choices. Bright gold in color, on the nose this Champagne reveals floral softness and an interesting mineral note. Then hints of toast and ash, characteristic of Dom Pérignon. Aromas of nuts and candied fruits then appear. Then the freshness of fragrant verbena, white pepper and rosemary is revealed for an instant and unexpectedly, before delving into the darkness of spices and licorice root. In the mouth, however, it draws and engages, in a more tactile and vibrant way than aromatic. Like a wave, it follows a definite rhythm until it breaks: first it unfolds, then it envelops, in a generous and structured way, and finally it retreats into a deep and dark verticality, slowly leaning toward a bitter and savory iodine sensation. A meditation wine, it can be drunk alone for a unique and engaging experience. But it can also accompany lunches or dinners of the highest order.
